I've never seen anything saying that you can't ride a bike back in there on the jeep trails, but from what I've seen, a lot of it's really muddy and it's just dirt roads.

I've ridden there quite a lot. There is at least one singletrack trail, that i am aware, that IS open for bikes; only a few miles long though. This is located just north of Colt Creek Park at the south end of the swamp along route 471. The Florida Trail passes through the swamp, but is not bike friendly as of now.  There are also some 4 wheeler trails on the north side of Hwy 50 and just east of the railroad tracks near Ridge Manor. This area may not technically be Green Swamp and actually be Richloam - but it's all the same watershed. They are flat but twisty. I have no map for them, but you can see them here:

 Blue dot = 4-wheeler area
 Blue line = singletrack

https://maps.google.com/maps/ms?msid=213808022712220748617.0004c37b55645ff26bd03&msa=0&ll=28.408917,-82.057228&spn=0.234032,0.308647

I suspect that there are a ton of 4-wheeler trails out there... all would likely be illegally build, but I'm pretty sure they are out there.

I used that entire region a ton to train for TD and to help build the Huracan and Trans Florida routes.
