The mamasita is getting painted so I wanna rebuild it. Does anyone know who makes the lowest stack height headset that will fit my frame?

I know Cane Creek has a Zero Stack headset.  Don't know about compatibility.  If you are running a suspension fork, then clearance could be an issue (i'm sure you thought of that also though).  Good luck

you have to use a traditional style headset on that frame you cant use a inset or a zero stack.  i would say the 110 or the king would be your best bet.

If you are looking for high quality on a budget go with a Cane Creek S3.  You can find them for around $30 on Ebay.
